Comfort food that’s good for you… say what?!

Seriously… this stew is so stinkin’ good! (In a good way… your house will smell heavenly!) It’s filling, delicious, and shocking low in calories. I found in on Rach’s magazine website… but surprisingly she didn’t write it… and of course I tweaked it. It’s not a quick meal, but I find it extremely therapeutic to spend some time in the kitchen just peeling and chopping. Is that odd? So make it on a rainy Saturday afternoon and then enjoy the leftovers for lunch during the week. Here’s the line up…


Sadly, the poor green beans got left out of the picture… you snooze you lose… and they were snoozing in the freezer.

Hearty Chicken Vegetable Stew
1 ¼ lbs boneless, skinless chicken tenders
1 lb small yellow potatoes (skins on, washed and thinly sliced, and I mean thin!)
½ lb of fresh green beans (ends snapped off and then cut/snapped in half)
1 lb of carrots (peeled and chopped)
4 Plum tomatoes (quartered)
1 Large onion (finely minced)
32oz of Chicken Stock
EVOO
S&P
1 heaping tablespoon of Herbe de Provence

First, preheat your oven to 500˚. Meanwhile, get to washing and chopping those veggies.
Coat the tomatoes in a little EVOO, S&P. Roast them for 20 minutes, or until they melt into the pan when pressed with a fork. While they’re roasting, pat your chicken dry and season both sides with S&P. Put a large soup pot over medium heat with some EVOO and cook the chicken 4 minutes on each side, then put it on a plate to rest a bit before you shred it up with a couple of forks. Add a little more EVOO to the pot if needed, and add the onion and a little salt. Cook until they’re nice and soft and then add the carrots, potatoes and stock. Simmer for 10 minutes and then add green beans, tomatoes, and herbe de provence. Partially cover the pot with the lid and simmer for another 10 minutes or so, until the veggies are tender. Add the shredded chicken to the pot. Salt and Pepper to taste.

Take a big whiff and then grab that ladle! Make sure you let it cool for a bit… a couple eager people have burned their tongues more than once on this stuff! It’s just so darn inviting!
